5 Tips on How to Make Amazing Rice Noodles
Now that you have seen how simple it is to make rice noodles, the next time you are craving for some, you no longer need to go to the Asian grocery store, rather, you can make your own homemade rice noodles by following these 5 amazing tips!
#5 Storing Rice Noodles is Essential
Usually, when making your own homemade rice noodles, you often end up having more til the next recipe.
Fresh rice noodles can only stay good for about 3-4 days maximum when placed inside the fridge. However, cooling the noodles inside the fridge makes it hard.
If you are planning to use it for any stir-fried dishes, you can simply thaw the noodles in the microwave for a few minutes when needed.
Dried rice noodles, on the other hand, stay longer as long as it is sealed and stored properly. When using dried noodles, place it on a bowl and pour boiling water over. Let it sit for about 7 minutes before cooking.
You can also soak the dried noodles for 30 minutes on a cool or room temperature water before using. However, I personally don’t recommend this since soaking it for too long will alter the texture of the noodles.
#4 Grease Each Sheet
Although rice noodles are easy to make, the method is quite tricky and you need to carefully observe even the tiniest details.
One thing I see that most people fail when making rice noodles is that they often forget to oil brush each sheet. This is very important to avoid the noodles from sticking.
Before adding the batter into the pan for steaming, grease it with vegetable oil or butter to avoid sticking at the surface. You need to do the same when layering the sheets before cutting.
#3 Stir the Rice Mixture Before Steaming
Another tip that you should not miss is to stir the batter or the rice mixture before putting it inside the pan.
This is because rice flour is actually thicker unlike the wheat flour and so the grains are heavier and they settle at the bottom.
If you don’t mix your batter well, you’ll notice that the noodle sheet is not consistent and thick.
#2 Use a Flat-bottomed Pan
In order to get the right noodle thickness, I highly suggest that you use a flat-bottomed pan, a baking pan, or a pyrex would do in preparing your rice noodles.
And you should make sure that the pan is sitting on the boiling water, fully leveled. If you have baking pans then, better. You can use at least 2 to 3 pans to make the cooking faster.
#1 Do Not Overcook
Finally, the golden tip is not to overcook the noodles. Otherwise, you’ll end up with a hard noodle that’s too chewier to eat.
Once you have poured the batter into the pan, cover it and cook on high heat for 5 minutes. If you are using a thicker pan, increase it to 7 or 8 minutes cooking time.
After the first sheet is cooked, set it aside to cool down while doing the same processes on the rest of your sheets.
When all the sheets are finally cooked, layer them all and cut into the desired size, but don’t forget to brush some oil on each layer, okay? 😛
